What "curated" means

Eight of the nine plates are chosen by MORI KOUGEI from current stock — the wood species, grain, and colour are ours to select, yours to discover when they arrive. No two sets will ever be the same.

The indigo plate

Every set includes one indigo-dyed Japanese oak plate. Hand-dyed using natural indigo through the traditional Hakko-date (fermentation-vat) method — a craft long practised in Tokushima — it brings a deep, still blue to the arrangement. Among nine plates, it becomes a quiet anchor.

The eight curated plates

Selected from available stock, centred on Japanese oak. Each piece has its own grain, its own tone, its own character — even within the same species, no two are the same. Occasionally a piece with rare figure wood makes its way into a set.

Laid out 3×3, nine one-of-a-kinds find a natural order. A table with this set becomes something to look at.

What is TSUKI-JIRI?

Wood veneer (tsuki-ita) is made by selecting timber with beautiful grain and slicing it thin. In that process, planks of a certain thickness are produced — these are the tsuki-jiri. The Petite Plate is made from 8mm tsuki-jiri: carefully selected timber, given its own role. Every piece is unique.

How to use it

Nine plates change what a table can do. One piece of sushi per plate, each a little different. One for each guest. A different plate for each small dish. Or simply arranged 3×3, as a collection in the centre of the table.

As a gift, nine plates chosen by someone who knows wood is a complete and considered present — nothing left to decide, everything to enjoy.

Each plate arrives in its own purpose-made box, presented together as a set of nine. Simple, considered packaging — ready to give as it arrives.

[Care & handling notes]

Please read the following before use.

  • Handle with care — excessive impact may cause damage.
  • Wash with a soft sponge and mild dish soap.
  • Not suitable for use in microwave ovens, dishwashers, or refrigerators. Avoid use at high temperatures.
  • Contact with iron in wet conditions may cause discolouration.
  • Do not leave in direct sunlight for extended periods.
  • Do not soak in water — this may cause staining, warping, or cracking.
  • Grain and colour vary between pieces. Knots and tonal variations are part of the natural character of the wood.
  • Intended for use with room-temperature to warm foods (not hot).
  • For the indigo-dyed plate: once cured, the finish does not transfer colour. Please note that slight variations in tone and depth are a natural quality of the wood and dye.
